This recipe is cool and refreshing….like a snowman in the winter time (make sure you check out our reversible Part 1 Snowman block project).  Snacks can pack on calories not to mention increase the width of our hips. So this light snack will be perfect with a glass of unsweetened tea.

Use gluten-free crackers or rye bread for an afternoon snack. Add a couple carrot sticks and a stalk of celery and you have a healthy, low calorie lunch. Head to the kitchen and create this spread to have ready for a snack or lunch today. AND it will get you away from your project for a needed break. Enjoy!


  • 1 large cucumber, peeled, seeded, diced
  • 1 small diced onion
  • 1 softened 8-oz cream cheese, low fat
  • 1-2 tablespoons mayonnaise (Miracle Whip works best)
  • Green food coloring, if desired

Mix all together. Chill. Serve on rye bread or crackers. Yummy!!
